Magimix Zucchini Corn Fritters with Goat Curd Recipe

This recipe is so quick and delicious, it’s a big winner in my household. Even better, is using a cook processor to make it.
I’ve adapted the recipe from Thomas Farms Kitchen to be used particularly in the Magimix Cook Expert.
Magimix Zucchini Corn Fritters with Goats Curd

Fresh, seasonal veg with a tangy salad and smooth goat curd made easily in the Magimix Cook Expert using Thomas Farms Kitchen delivered produce.

Ingredients
- 2 corn cobs, husked with kernels removed
- 1 zucchini
- 1 eschallot
- 2 spring onions
- 3 free range eggs
- 3 coriander sprigs
- 250g self raising flour
- 70g rocket
- 60g cherry tomatoes, halved
- 100g goat curd
- 60ml olive oil
- salt & pepper to taste
Prep
- Using the small plastic Magimix Cook Expert on Food Processor mode, pulse until finely diced. Tip into the metal bowl.
- Fit the large-hole grater disc into the medium sized bowl. Grate the zucchini. Tip the zucchini into the metal bowl.
- Fit the fine slicer disc into the medium sized bowl. Slice the spring onion. Tip the spring onion into the metal bowl.
- Roughly chop corriander and place in the metal bowl.
- Add corn kernals and flour to the metal bowl.
- Choose Expert program, 1 minute, speed 2A, 0 temperature to mix.
- Crack eggs into the metal bowl.
- Choose Expert program, 1 minute, speed 3, 0 temperature to mix.
- Heat a non stick frypan on medium heat. Add a little of the olive oil, and a 1/3 cup of the fritter mixture to form a fritter in the pan. Repeat adding 2 more 1/3 cups of fritter mix so there are 3 fritters cooking in the pan at once.
- Fry the fritters until bubbles form and pop on the surface, then flip and cook until golden brown on both sides. Repeat until all mixture is used, resting finished fritters on a plate.
- Serve fritters on two plates. Scatter rocket and tomatoes, drizzle with olive oil, salt and pepper. Dollop half the goats curd on each plate of fritters.
- Bon appetite! Don't forget to run the Rinsing cycle on your Magimix to pre-clean it.
Great tip
- Make the fritters your own by adding chilli or other herbs you like.
- Try a quick salad dressing of balsamic and olive oil for the salad. Vinegar is very good for you!
